00:01:28   about like entire bagel sandwiches like

00:01:31   what all goes on that bagel your

00:01:33   favorite bagel flavor you have to have

00:01:36   reasons behind it and one of those

00:01:37   reasons should obviously you have

00:01:39   reasons it should include sandwich or

00:01:43   not so you want to decide you know like

00:01:46   the reason you like the bagel is based

00:01:49   on its application in your life that you

00:01:52   prefer so if you like if you're a

00:01:54   sandwich person and you prefer bagels

00:01:56   most with sandwich you're obviously

00:01:58   going to pick the superior bagel

00:02:00   sandwich bagel but if you like it with

00:02:03   butter or you like it with cream cheese

00:02:04   that's gonna be your preference is

00:02:06   whatever your favorite bagel is with

00:02:08   those accoutrement I guess you would say

00:02:15   listing decisions because I mean no one

00:02:18   just eats a plain bagel I mean who does

00:03:18   I have not hat don't say anything yet

00:03:23   okay asiago cheese I've only had it in

00:03:26   Ohio from a bagel place that were

00:03:29   Brooklyn people who came and started a

00:03:31   bagel place so it wasn't just like

00:03:34   bruger's or something like that out

00:03:36   there none of the blocks yes I had it a

00:03:39   blocks okay so it was sure I didn't they

00:03:43   offered that flavor yes I had it with a

00:03:45   chicken salad on it and it's very very

00:03:47   good with chicken salad okay maybe I did

00:03:48   have it at bruger's oh my gosh so I saw

00:03:52   your cheese bagels I mean so I know my

00:03:55   world is just okay my number four bagel

00:03:57   is a blueberry bagel because it is

00:04:01   accessible everywhere that our great

00:04:03   bagels are accessible which is all of

00:04:05   the New York lower area which has the

00:04:08   best bagels the New York the lower New

00:04:12   York region yeah okay pocket that's okay

00:04:16   keep going yeah so blueberry yeah I was

00:04:21   gonna say asiago cheese because I really

00:04:23   do like it I haven't had it in a very

00:04:25   long time I think it's kind of a really

00:04:27   good

00:04:27   savory it has like the cheese melted I

00:04:29   don't know it's just very good but it is

00:04:30   kind of a base of a plain bagel with

00:04:33   kind of a mild cheese on it melted kind

00:04:36   of like into it ish

00:04:38   so yeah honorable mention Accio which is

00:04:41   number four blueberry because blueberry

00:04:44   bagels are excellent and they sound

00:04:46   really weird and they sound like

00:04:47   something a child would have but I like

00:04:51   them a lot they do not taste like

00:04:52   blueberry cake donuts that is very sweet

00:04:57   this is more of a weird savory blueberry

00:05:00   happening and I really like it with

00:05:02   plain cream cheese interesting no see

00:05:05   like eye or butter yeah usually I would

00:05:08   expect the the fruity bagels the

00:05:10   cinnamon raisin and the blueberry to be

00:05:12   toasted with butter most of the time

00:05:14   well toast with butter does bring it

00:05:16   like a little bit more sweetness to it

00:05:18   especially because you know you have

00:05:19   sweet cream butter and all that has

00:05:20   stuff but if you want more of a

00:05:22   substantial breakfast I guess blueberry

00:05:26   with cream cheese is there is really

00:05:28   really really good and it's way better

00:05:30   than all of the other weird seeded

00:05:32   bagels that are out there I should say

00:05:36   lonely seeded bagels we will get there

00:05:39   better man those are terrible and plain

00:05:44   why bother why bother we are in complete

00:05:47   agreement on that yeah plain to me a

00:05:49   plain bagel plain bagels are delicious

00:05:51   however there are so many better bagels

00:05:55   I would rather get any other bagel than

00:05:56   plain I feel like then you're just

00:05:57   eating like a dough ring like well I

00:06:00   mean okay bad bagels our dough rings

00:06:02   good bagels are malted nice and

00:06:03   delicious but like a plain bit it's just

00:06:06   like you might as well I don't know I

00:06:07   rather pick a croissant you know I

00:06:09   actually that's a tough call between

00:06:11   like it's been the mode of meeting if if

00:06:14   I have like you know a croissant with

00:06:15   you know stuff in it or like a plain

00:06:17   bagel like you know maybe with with some

00:06:19   flavored cream cheese on it or toast it

00:06:21   with some nice butter like I would

00:06:23   rather have other bagel flavors if I

00:06:25   have the option but if I don't have the

00:06:26   option if my option is either plain

00:06:28   bagel or like just plain old bread I

00:06:30   would take the bagel over the bread even

00:06:32   if it's plain however there are so many

00:06:35   good breads now like all the crazy

00:06:37   breads that come out the focaccia and

00:06:39   something-something and the flat this

00:06:41   and the I suppose I see that I don't

00:06:43   know but like there's lots of different

00:06:45   breads out there that if I'm gonna have

00:06:47   a bagel I'm gonna want my favorite bagel

00:06:49   flavors my top four bagels favorite play

00:06:51   baby before favorite bagel flavors or

00:06:57   something else that's okay that's a

00:07:00   difference in opinion yep

00:07:02   speaking of another difference of

00:07:03   opinion that was almost the same my

00:07:04   number four bagel is yes I go cheese

00:07:07   bagel really good stir over there

00:07:11   because I pick the same thing thinking

00:07:13   that you wouldn't have so my number yeah

00:07:16   so I cheese bagels you know they most

00:07:18   New York bagel places don't even offer

00:07:20   them that's why I kind of was like

00:07:23   honorable mention waffling because no

00:07:25   it's not around here it's not a true

00:07:28   bagel flavor well it's not an old-school

00:07:30   bagel flavor it's alright it isn't the

00:07:31   traditional bagel flavor and I think a

00:07:34   lot of places don't offer it or don't

00:07:36   consider it or even look down on it

00:07:38   because it isn't one of the like

00:07:39   old-school traditional like New York

00:07:41   slash Jewish previously how fast did the

00:07:44   cinnamon sugar a french toast bagel

00:07:48   we're all into everyone's baskets in the

00:07:50   in the bagel places sure similar that

00:07:52   jumped the that that jumped in pretty

00:07:54   quickly and now it's like a standard in

00:07:56   most places that's true I mean maybe

00:07:58   maybe that one sells a lots of kids and

00:07:59   that's one of the reasons I don't know

00:08:01   anyway regardless people like Sarah the

00:08:04   usher good cheese bagel I it seemed to

00:08:06   become really big in like the early

00:08:07   2000s with with the spread of the big

00:08:09   chain bagel stores and and then ideas

00:08:12   and and I feel a New York don't even

00:08:15   know what those are no they would never

00:08:17   survive here exactly so I first had them

00:08:20   at bruger's and Panera and actually

00:08:22   first Panera I think then bruger's I

00:08:24   think they are kind of swept the nation

00:08:26   with the I see I go cheese bagel then

00:08:28   everyone else kind of followed suit but

00:08:30   what I like about it and I think it

00:08:33   deserves more respect than it gets

00:08:35   because it has brought a lot of people

00:08:38   like Midwesterners in to bagels a lot

00:08:40   more effectively than previous attempts

00:08:42   had do you think that there's a secret

00:08:44   bagel cartel happening in New York State

00:08:47   that keeps out the chain bagel places I

00:08:50   think it's the I first of

00:08:53   do we know that I mean they they have

00:08:55   Panera's in the New York area but no one

00:08:57   buys their Pagels I don't know I don't

00:09:01   even think they make they make them for

00:09:02   the sandwiches I guess but that's about

00:09:04   it I mean if you know one going in

00:09:06   buying a dozen bagels from Panera I mean

00:09:07   I bet sigh but people do I mean people

00:09:09   having shoes at Subway in the city I

00:09:11   will judge them so hard if someone

00:09:14   brought a dozen Panera bagels to our

00:09:16   house I'd be like what are you doing

00:09:20   yeah not not so much that that like

00:09:22   they're bad but just we have so many

00:09:25   problems better like I rather they go to

00:09:27   a really crappy bagel place then bring

00:09:30   Panera because at least so the bagel

00:09:33   place that that were I'm not going to

00:09:35   name it because it's mean but there's a

00:09:37   bagel place that's near us that is I

00:09:40   think worse than Panera hotring of

00:09:42   garbage yeah so I don't know anyway I

00:09:46   shall go cheese bagel I think deserves

00:09:48   special mention here because it really

00:09:52   has advanced bagel flavors past the old

00:09:54   cartel flavors and it was like one of

00:09:56   the first ones to do that and it really

00:09:58   has brought in a lot of people from the

00:09:59   rest of the country who did who aren't

00:10:00   in like bagel strong areas and also as

00:10:04   just a you know the reason why I thought

00:10:06   my number four is not just for honorable

00:10:08   mention because it really is a very good

00:10:11   bagel for sandwiches I don't think it's

00:10:14   very good toasting it I it's actually

00:10:17   kinda difficult to touch with it making

00:10:18   a catch on fire because the cheese tends

00:10:20   to burn but anyway so don't toast them

00:10:22   but for sandwiches I I think they're

00:10:25   actually quite good if you're gonna have

00:10:27   like like Turkey or something like you

00:10:29   know exactly right yeah it works it

00:10:36   totally works

00:10:36   so I think it is great for that it is my

00:10:40   number four for that reason so my

00:10:42   brother he moved out to Moline Illinois

00:10:45   and he lives out there and works for

00:10:47   John Deere and being a New Yorker in you

00:10:51   know the the corn Heartland out there a

00:10:53   whole bunch of people they eat bagels in

00:10:58   their shop and the bagels they get are

00:11:00   like lender's bagels from the grocery

00:11:02   store like in bags right that's what I

00:11:04   grew up on in Ohio which is right

00:11:06   I love them they were so good so they're

00:11:10   barely bagels but okay so when he went

00:11:13   home he was telling us about this he's

00:11:16   like I can't believe the bagels they

00:11:17   have out there they're so terrible so he

00:11:19   brought to them a whole bunch of New

00:11:22   York bagels like we packed them all up

00:11:24   and and he he brought them back to

00:11:26   Illinois and when he put them out for

00:11:29   everyone at breakfast they were all

00:11:31   really confused that they weren't cut

00:11:33   and they're like what kind of cheap

00:11:36   bagel place do you get these from that

00:11:38   they don't cut their bagels and he's

00:11:40   like you're so used to them being from

00:11:42   the package that you just expect them

00:11:45   all to be cut whether they're from a

00:11:46   fresh bakery or they're from the grocery

00:11:49   store and that to me is just astounding

00:11:51   so I put a lot of people listening right

00:11:52   now are like wow yeah yeah we don't cut

00:11:55   our bagels they just arrive in a brown

00:11:57   bag do you think there are any listeners

00:12:00   that have made it this far into both

00:12:01   knowing us and also into listening to

00:12:03   this episode who don't know like proper

00:12:07   East Coast bagels it's possible Wow if

00:12:09   you I mean look at the the guys that my

00:12:11   brother was working with you know and

00:12:13   and guys and and women who my brother

00:12:15   was working with but they aren't listen

00:12:16   to our show they're not listening to our

00:12:18   show but I mean they're out there and

00:12:20   they didn't expect that to show up when

00:12:22   he you know my brother tells them oh I'm

00:12:24   gonna bring you real bagels and then he

00:12:26   shows up and they're like no I'm just

00:12:28   surprised that those people would be

00:12:29   tolerating us this long I figured if he

00:12:32   were that much if you were that far from

00:12:34   like bagels snobbery culture I figure

00:12:37   you would have turned this off long ago

00:12:38   well some people like to get knowledge

00:12:40   regardless right well for those people

00:12:43   we salute you know if there are people

00:12:46   listening out there who have not had a

00:12:50   like coastal bagel california bagels are

00:12:56   kind of weak i mean i mean but there are

00:12:58   plenty i mean look at the place blocks

00:12:59   in in columbus you know there are plenty

00:13:03   of places where brooklyn natives or

00:13:06   someone New York native has gone out and

00:13:08   brought bagel making technology to the

00:13:11   rest of the world no it's serious like

00:13:13   in a kettle yeah I mean a lot of places

00:13:16   don't boil their bagels that's like a

00:13:18   weird thing not weird but that's like

00:13:20   the way to make

00:13:21   people a lot of people don't know how to

00:13:22   make an authentic New York bagel yeah

00:13:25   it's just you know they think they're

00:13:27   making bagels but they're just making

00:13:29   rings of dough right they're making

00:13:31   circular bread with a hole in the middle

00:13:33   yeah and oftentimes that doesn't even

00:13:35   work out no all right what's your number

00:13:38   three all right

00:13:39   my number three is the cinnamon raisin

00:13:42   interesting I know I have two sweet ones

00:13:44   so that yeah number three double yeah

00:13:46   cinnamon raisin is my number three it

00:13:48   was almost my number two as I really

00:13:50   like it but it's my number three and I

00:13:52   love it with scallion cream cheese a

00:13:54   little salty sweet that is weird

00:13:56   it's so awesome and you don't think as

00:13:58   well you think it's weird every time but

00:14:00   you totally know my order it and see I I

00:14:03   totally respect both the cinnamon raisin

00:14:05   bagel and scallion cream cheese on their

00:14:08   own and in other combinations I love

00:14:10   both of those things however the

00:14:12   combination of those two is really weird

00:14:14   oh no it's so good okay listeners out

00:14:16   there you're gonna first you're gonna

00:14:18   tell us if you're from the Midwest and

00:14:19   have never seen a real bagel second

00:14:21   you're going to tell us you're going to

00:14:23   go out right now if it's the morning and

00:14:26   you're gonna get yourself a bagel and

00:14:27   you're gonna get yourself some scallion

00:14:29   cream cheese and you will put them

00:14:30   together and you will be amazed at how

00:14:32   delicious it is that's right I should

00:14:34   also point out to you said if it's the

00:14:37   morning to go to bagels it is not

00:14:39   possible to get good bagels after about

00:14:42   2:00 p.m.

00:14:43   oh no yeah yeah you cannot no yeah don't

00:14:47   do it like it really goes later get an

00:14:50   early bagel and then wrap it up and and

00:14:53   keep it I don't know because they leave

00:14:54   them out in the baskets that's the

00:14:55   problem so if you get early bagels

00:14:57   you can always wrap them up and keep

00:14:58   them a little bit more moist in like a

00:15:01   paper bag in a plastic bag paper and

00:15:04   then plastic over that and then your

00:15:06   bagel will last exactly all right so my

00:15:09   number three it's kind of a valley to

00:15:12   find flavor it's kind of the general

00:15:15   category of like medium brown

00:15:18   whole-wheat honey kind of like wheat

00:15:22   bagels that usually have oats adhered to

00:15:24   the outside yes I know what you're

00:15:28   talking about but I can't believe that's

00:15:29   on your list it is because the first one

00:15:32   my list is short as you'll see well it

00:15:34   should

00:15:34   for yes and they're thinking about it

00:15:39   yeah I see that for you

00:15:41   yeah yeah so yeah I actually a travel

00:15:44   coming up before

00:15:46   that's how blueberry got on my list

00:15:48   exactly crazy thing so so these these

00:15:50   kind of like you know we honey wheat

00:15:52   whatever whole wheat whatever with oats

00:15:54   on the outside those are excellent

00:15:57   when toasted with butter and that is

00:16:00   it's such a nice like um kind of unique

00:16:03   combo of like texture and flavor and

00:16:05   everything I really enjoy that as a

00:16:08   breakfast combo just the whole wheat

00:16:10   with oats on the outside toast with

00:16:12   butter I always feel like that the whole

00:16:14   wheat bagel has a little bit of bagel

00:16:16   guilt that you're eating a whole wheat

00:16:17   bagel because you feel guilty for eating

00:16:19   a bagel so you're really oh the whole

00:16:22   wheat because it's better right yeah I

00:16:25   mean I hold none of those illusions but

00:16:29   or whatever that word is there but

00:16:30   delusions delusions there we go that's

00:16:33   much better

00:16:34   yeah English major obviously yeah so I

00:16:37   hold none of those delusions I know that

00:16:40   every time I eat a bagel it's just the

00:16:41   way too much carbs and gluten and

00:16:44   everything for what we should be doing

00:16:46   but yeah that combo whole wheat with

00:16:49   oats and an side with toast with butter

00:16:50   awesome

00:16:50   bagel guilt okay my number two is the

00:16:54   everything bagel I do not like all these

00:16:59   seeded bagels I do not like regular

00:17:01   poppy seed or sesame seed I do not like

00:17:04   the single bagels I all a single seeded

00:17:06   bagels I only like the multi seed bagel

00:17:09   and the reason the multi seed bagel is

00:17:12   the best because it has salt and it has

00:17:15   garlic on it and it doesn't have those

00:17:18   flavors so exclusively like there's so

00:17:21   much it's so it's not just like a salt

00:17:23   bag or bagel which exists if everyone is

00:17:26   surprised by that who is not from over

00:17:28   around here or a garlic bagel which is

00:17:32   just way too much garlic because a lot

00:17:34   of times they do put the garlic in the

00:17:35   dough as well so it has yeah John I've

00:17:39   never seen that I mean I should point

00:17:41   out like garlicky those are garlic

00:17:43   bagels I should point out about bagels

00:17:45   too they have it in the dough

00:17:46   they have salt in the dough you

00:17:48   well yeah they put that it's extra salt

00:17:49   like it there's chunks of salt in the

00:17:51   dough sometimes mmm that's weird is it

00:17:54   no I mean so I should point out so I

00:17:56   worked at bruger's in high school in

00:17:58   Ohio and so my my experience of like how

00:18:03   the bagel restaurants work is solely

00:18:05   based on that which was granted

00:18:07   something like sixteen seventeen years

00:18:11   ago and was also a provers in Ohio so

00:18:15   obviously I don't know I've never worked

00:18:16   in like a like a you know quote a real

00:18:17   bagel store but I do know from back then

00:18:20   like all the flavors that they did you

00:18:23   know like the all the seeded bagels and

00:18:25   the salt and Moe which kind of council

00:18:28   those were all based on the plain bagel

00:18:30   dough you know just whatever seed you

00:18:32   put on top you know many of the flavors

00:18:34   just have the same plain bagel dough in

00:18:36   the middle and you just put different

00:18:37   things on top some of them are a little

00:18:40   bit more complicated than that certain

00:18:41   bagel places its but yeah it's possible

00:18:43   like hot bagels I'm pretty sure they put

00:18:45   it all in it's it's tricky you know what

00:18:48   what makes garlic and onion so good on

00:18:51   the outside of a bagel

00:18:52   is that they are baked so it gets kind

00:18:55   of toasted garlic right when it goes on

00:18:58   it's not it's raw when it goes on it

00:18:59   gets toasted in the baked and so if you

00:19:02   if you put these on the inside in the

00:19:03   dough it doesn't really work it doesn't

00:19:05   really develop that that nice toasty

00:19:07   flavor so it act that that's you know

00:19:10   even you can think about it like you

00:19:11   know when you bake things at home you

00:19:12   have the same issue of like when

00:19:14   something's inside something it takes on

00:19:16   a very different characteristic when

00:19:18   cooking than when it's on the outside

00:19:20   being toasted or heated directly okay

00:19:22   for the sake of argument then we can say

00:19:24   it's only outside but anyway regardless

00:19:26   of what's on the outside I don't like

00:19:28   when they are singular things on the

00:19:29   outside I find them too strong and so I

00:19:32   but for an everything bagel I like the

00:19:35   combination and the balance that it

00:19:37   brings and I believe that the best

00:19:39   interior for an everything bagel is

00:19:40   chicken salad because it it's not as

00:19:44   it's not like you're biting through a

00:19:46   wall of meat or a wall of vegetables

00:19:48   depending on what you put on your sliced

00:19:51   kind of sandwiches or like a wall of

00:19:53   cheese those type of things taste much

00:19:55   better on the asiago cheese bagel and

00:19:58   but for the everything bagel the

00:20:01   the the velvety texture of a really good

00:20:04   chicken salad balance is super well with

00:20:07   all the flavors of an everything so I

00:20:09   love everything bagels I would not toast

00:20:12   it with butter I find it that to be too

00:20:14   strong there's like too much seed going

00:20:17   on well there's a lot of salt if you do

00:20:19   that because you have salted butter on

00:20:20   top of a salty bagel it's okay with

00:20:22   cream cheese scallion cream cheese is

00:20:25   very good with an everything bagel but

00:20:27   there are other bagels which is my

00:20:28   number one bagel that is better off with

00:20:32   cream cheese so chicken salad on and

00:20:34   everything bagel is my number two and

00:20:36   also want to point out that oftentimes

00:20:38   everything bagels they get quarantined

00:20:40   in their own little bag because people

00:20:42   get horrified when everything bagels

00:20:44   kind of assault all the other bagels in

00:20:47   the bag yeah you know acid step yeah

00:20:49   that's totally fair because that that is

00:20:50   obviously what happens like you know you

00:20:52   put a but especially good like when you

00:20:53   put good bagels into a bag they're

00:20:56   probably still warm so you have this bag

00:20:58   worth if there's all this like kind of

00:20:59   like semi like steamy moisture in there

00:21:01   and the moisture makes the onion and the

00:21:04   garlic on the everything bagel is very

00:21:05   sticky yep and it makes it stick to all

00:21:07   the other bagels that are near its it's

00:21:11   very like it's it's kind of like a bagel

00:21:12   faux pas to package everything bagels

00:21:14   into a mixed dozen touching everything

00:21:17   there's are a lot of people that do not

00:21:20   like everything bagels at all like they

00:21:22   really don't like them so it's a strong

00:21:24   flavor and any of the other flavors

00:21:26   don't seem to contaminate each other but

00:21:28   the everything definitely does yeah I

00:21:30   mean I'm sure you know if you got only

00:21:32   onion or only garlic yeah those should

00:21:34   probably be quarantined too but honestly

00:21:36   I don't know I've never seen anybody a

00:21:39   quarantine onion or and well I've ever

00:21:41   seen anybody even buy them with the

00:21:42   exception of what I worked at bruger's

00:21:43   well you know people would would buy

00:21:45   them there but not often absent in the
